I. love. hummus.
Make this recipe.
Moosewood Hummus- adapted from Moosewood cookbook
• 1 400 g can of chickpeas (or 15 oz can)
• 2-3 medium cloves garlic, minced
• 1 teaspoon salt
• juice of 2 medium lemons
• 1/2 c. tahini (sesame paste)
• 1/4 packed cup finely minced fresh parsley
• lots of freshly ground black pepper and cayenne pepper (or paprika or chili) to taste

Blend/process the chickpeas into a smooth puree with a little bit of the liquid from the can. Mix in other ingredients and adjust to taste. Garnish the bowl with extra virgin olive oil and cayenne. Enjoy! with pita bread and vegetables like cucumber and tomato…add plain yogurt and feta cheese if you’re feelin’ the dairy. Makes an amazing vegetarian, healthy sandwich on pita bread.
