The Wrap of Pickle-y Herb-y Creamy Goodness

When I lived in the Czech Republic, one of the European food products I fell in love with was Vesalá Kravá (The Laughing Cow) spreadable cheese.  This product is to Germans and Czechs what peanut butter is to Americans, and so there are also other brands and generic versions of these spreadable cheese wedges in their grocery stores.  In Czech, it is most commonly enjoyed for breakfast or supper on rolls with jam or cold cuts (Czechs eat their hot, big meal at lunch, typically).

So while I was there, one of my expat American friends shared this recipe with me, and it is a flavor combo that is pretty much, well, as she described it, fantabulous:

The combination of herbed spreadable cheese and tangy pickles is out of this world. Makes great finger food for a party or late night snack for your wolverine husband.  Or yourself 🙂

So now that I am back living in the USA, I was pretty excited to find The Laughing Cow cheese wedges at my grocery store.

The Laughing Cow

Like all things American, they came in a slightly larger package, which made me laugh.  But they seem to taste just as good as the European version. (For those of you who don’t like Swiss cheese, this doesn’t have a strong flavor like normal hard Swiss. Don’t let the label scare you away.)

So, as I was brainstorming for lunch earlier today, I came up with this pretty delicious wrap based off of Kristie’s ingenious recipe that transforms it from an appetizer into a great meal!Herbed Cheese Pickle Wrap

Here’s the recipe.  You can switch out or omit certain ingredients but the herbs, onion powder, spreadable cheese, and pickles are a must!  You should at least try it!  If I ever open a restaurant this will definitely be on the menu.

Herb-y Cheese Pickle Wrap

Serves 1

– 1 large tortilla/wrap

– 1 wedge Laughing Cow spreadable cheese (or other similar product)

– a large pinch of onion powder

– 1/4 tsp Italian seasoning (or other combination of dried herbs)

– 3 slices deli ham

-1 or 2 slices pepper-jack cheese

– 1 dill pickle spear, diced

– 4 cherry tomatoes, diced

– a few baby spinach leaves

Spread cheese on the tortilla and sprinkle onion powder and herbs over it, smearing them into the cheese with knife. Top with ham and pepper jack slices.  Then add diced pickles and tomatoes and the spinach leaves.  Roll up the tortilla and slice in two.  Enjoy with fruit, veggies and/or chips of your choice.

If you want a bigger wrap, just put more ingredients in your tortilla!
